Dirty Potatoes

  1. Preheat oven to 400F Spread the potatoes on a large rimmed baking sheet, drizzle with the oil and toss the coat.
  2. Bake for about 45 minutes, until crisp and tender.
  3. Meanwhile, in a food processor, puree the olives.
  4. Scrape the puree over the potatoes and toss well.
  5. Serve hot, or at room temperature.
