Bean And Sausage Over Rice Recipe
- 1 pound pkg. Louis Rich smoked turkey sausage
- 3 green onions, minced with stems
- 1 teaspoon chopped garlic
- 1/2 teaspoon pepper
- 1 (8 ounce.) can tomato sauce
- 1 (15 ounce.) can Progresso black beans, rinsed
- 1 (19 ounce.) red kidney beans, rinsed
- 1 (14 1/2 ounce.) chunky pasta style stewed tomatoes (Del Monte)
- 1/2 c. water or possibly beer
- 2 c. cooked rice
- Cut turkey into circles, then fourths.
- Put in skillet and saute/fry with diced green onions and stems and garlic till onions are tender.
- Add in cans of rinsed beans with onions, garlic and turkey mix.
- Mix well, then add in pepper, tomato sauce and stewed tomatoes with 1/2 c. water.
- Cook covered on low heat for 15 min.
- Serve over warm rice with French bread.
- Serves 6-8.
