The Best Veggie Burger
- 1 can great northern beans, 15 ounces, drained and rinsed
- 1 cup panko bread crumbs
- 2 large eggs
- 3 tbsp olive oil, extra virgin
- 1/2 cup caramelized red onions
- 1/4 cup roasted garlic cloves
- 1 1/2 cup cooked quinoa
- 1/2 cup shredded pepper jack cheese
- 1/2 tbsp salt
- 1/2 cup freshly chopped sage or parsley

- In a food processor add all the ingredients except beans.
- Pulse several times .
- Add half of the beans and pulse until almost completely creamy.
- 6-8 pulses.
- Add rest of the beans and pulse 3 more times.
- You want to see some beans.
- On a parchment lined tray, scoop half a cup mixture out and spread into a 1/4 " thick patties.
- Continue until you have made all the patties.
- Leave space in between each patty.
- Cover tightly and freeze for 3 hours or until patties are frozen through.
- Transfer to an airtight container using wax paper in between each patty to keep from sticking.
- To cook, in a skillet with some olive oil, about 1 tablespoon for two patties, heat oil over medium heat.
- Place each burger in the oil and cook for 3- 5 minutes per side.
- You want to see each side get a dark golden brown.
- Serve them nice and hot on a good quality bun.
- Add sliced tomatoes, onions, pickles, mayonnaise to top the burger.

- NOTE: To caramelize onions slice onions thinly and add to a frying pan with 1/2 tablespoon oil.
- Over a low heat, let onions just cook, stirring every 4 minutes until they become golden to dark golden brown in color.
- It takes about 12 minutes on average.
- Cook your onions while garlic is roasting to save time.
