Turkey and Zucchini Meat Loaf

  1. Preheat oven to 350F.
  2. Combine first 9 ingredients in large bowl and mix well.
  3. Shape mixture on rimmed baking sheet into 8 x 4 x 2-inch loaf.
  4. Bake meat loaf 45 minutes.
  5. Remove from oven.
  6. Stir preserves and mustard in small bowl to blend.
  7. Spread glaze over top of meat loaf.
  8. Return to oven; bake until thermometer inserted into center registers 165F, about 20 minutes longer.
  9. Transfer meat loaf to platter.
  10. Cut crosswise into slices and serve.
