Pinakbet

  1. Heat oil in a big pan
  2. Saute garlic, onion, ginger, and tomatoes.
  3. Add pork and cook until brownish
  4. Put in shrimp paste and the shrimp.
  5. Cook for 2 minutes
  6. Add water and simmer for 10-15 minutes or until pork is tender.
  7. Add a dash of salt and pepper.
  8. Add the squash.
  9. After 5-7 minutes, add the eggplant.
  10. Add the remaining vegetables.
  11. Season with a bit of salt.
  12. Do not overcook.
  13. Serve with steamed rice.
  14. Enjoy!
