Flash Chicken
- fresh breadcrumb
- 2 tablespoons chopped flat leaf parsley
- 1 tablespoon oregano
- 4 chicken thighs, fillets (600 grams)
- 2 tablespoons plain flour
- 2 eggs
- 14 cup olive oil, 60ml
- 700 g pasta sauce
- 12 cup parmesan cheese, grated
- 12 cup mozzarella cheese
- Preheat oven to 200C or 180C fan forced.
- Lightly grease a 6-cup capacity baking dish.
- Combine breadcrumbs and herbs.
- Toss chicken in flour, shaking off any excess.
- Dip in egg and breadcrumbs, pressing to coat.
- Heat oil in large frying pan on medium heat, cook chicken in batches for 1-2 minutes each side, till browned all over.
- Pour 3/4 cup pasta sauce into the base of prepared dish.
- Top with half the chicken 1 cup of pasta sauce and half the parmesan, then remaining chicken, pasta sauce and parmesan.
- scatter black olives if using, and mozarella.
- Season and bake for 30mins until cheese is bubbling and golden.
- Serve with salad.
