Garlic Lover's Pasta With Broccoli
- 1 lb pasta, I used penne
- 1 lb frozen broccoli
- 1/4 cup extra virgin olive oil. A must for flavor
- 1/4 tsp red pepper flakes
- 5 clove of garlic, minced
- 1 tsp salt, more if you need for flavor
- In large pot of boiling salty water, add dried pasta and frozen broccoli.
- Cook until pasta is aldente or to your preferred tenderness.
- Meanwhile about halfway through the pasta cooking get your garlic ready.
- In large, deep pan, heat olive oil over low heat.
- Once heated, add red pepper flakes and cook for 3 minutes.
- This helps flavor the oil.
- Now pull off from heat.
- Add your garlic and salt.
- Mix well and don't let garlic get color.
- It will taste bitter.
- If it cooks fast even off heat, add a splash of pasta water.
- Add into the oil and garlic your drained pasta.
- Stir well incorporating all the flavors.
- Serve hot.
- I am a purest on this and do not top with grated parmesan cheese but you can if you wish.
