Gefullte Kartoffeln (Sausage Stuffed Potatoes, Hamburg Style)
- 6 russet potatoes
- water
- salt
- 2 tablespoons butter
- 12 cup onion, minced
- 14 lb sausage meat
- 1 tablespoon chopped parsley
- 12 teaspoon salt
- 14 black pepper
- Preheat oven to 350F.
- Halve the potatoes and scoop out the centers, leaving unbroken shells.
- Cook centers in boiling salted water until tender.
- Drain and mash.
- Combine with remaining ingredients.
- Stuff into shells.
- Place in a greased baking dish.
- Bake for 1 hour.
