Chipotle-Corn Stuffing
- 3 cups onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups butter
- 1 gal. frozen corn, thawed
- 3 qt. water
- 1/2 cup canned chipotle peppers in adobo sauce, pureed
- 1 bag STOVE TOP Cornbread Flavored Stuffing Mix
- 2 qt. KRAFT CHEDASHARP Pasteurized Process American Cheese Shred, divided
- Cook onions in butter in large skillet 2 to 3 min.
- or until onions are tender.
- Add corn, water and pepper puree.
- Bring to boil.
- Remove from heat; stir in stuffing mix and half of the process cheese.
- Spoon into 2 full hotel pans (or 1/2 hotel pan for trial recipe); sprinkle with remaining process cheese.
- Cover; hold on steam table up to 1-1/2 hours.
