Grilled Halloumi Cheese
- 1/2 pound (2-slabs) Halloumi cheese
- 2 tablespoons extra-virgin olive oil
- Cheese Marinade, recipe follows
- 1 shallot finely diced
- 1 tablespoon minced garlic
- 1 lemon, juiced
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon freshly chopped parsley leaves
- Preheat grill to high heat.
- Brush cheese with 2 tablespoons oil.
- Grill on each side for 2 to 3 minutes until well marked.
- Remove from the grill.
- Pour marinade over the cheese and toss.
- Slice cheese into 1/2-inch pieces and serve.
- In a bowl, stir all the ingredients together.
