Carrot bread
- 2 tsp baking powder
- 300 grams all purpose(plain) flour
- 1 tbsp ground cinnamon
- 100 grams walnuts, chopped
- 100 grams desiccated coconut
- 300 grams grated carrots
- 300 ml light vegetable oil
- 1 tbsp vanilla extract
- 125 grams wholemeal flour
- 300 grams superfine (caster) sugar
- 4 large eggs, lightly beaten
- Preheat the oven to 180C.
- Grease and line 900 grams loaf pan.
- Sift the all purpose flour, wholemeal flour, baking powder and ground cinnamon into a bowl.
- Stir in the nuts, coconut and carrots
- Pour the oil, vanilla and sugar into a bowl and whisk together, then whisk in the eggs.
- Add the dry ingredients to the wet ingredients.
- Combine everything together.
- Pour the mixture into the pan.
- Bake for 45 minutes or until lightly browned.
- Insert a toothpick into the center of the bread.
- If it comes out clean, the bread is ready.
