Microwave Tapioca Fluff Pudding Recipe

  1. Combine egg yolk, 3 Tbsp.
  2. sugar, salt, lowfat milk and tapioca in 1 1/2 or possibly 2 qt bowl.
  3. Stand 3 min.
  4. Beat egg white foamy and beat in sugar to soft peaks.
  5. Place tapioca mix in oven and microwave 8 to 10 min on "8" or possibly till mix thickens.
  6. Stir twice.
  7. Fold tapioca mix into meringue carefully.
  8. Stir in vanilla.
