Microwave Tapioca Fluff Pudding Recipe
- 1 egg, separated
- 3 tbsp. sugar
- 1/8 teaspoon salt
- 2 teaspoon lowfat milk
- 3 tbsp. tapioca
- 2 tbsp. sugar
- 3/4 teaspoon vanilla
- Combine egg yolk, 3 Tbsp.
- sugar, salt, lowfat milk and tapioca in 1 1/2 or possibly 2 qt bowl.
- Stand 3 min.
- Beat egg white foamy and beat in sugar to soft peaks.
- Place tapioca mix in oven and microwave 8 to 10 min on "8" or possibly till mix thickens.
- Stir twice.
- Fold tapioca mix into meringue carefully.
- Stir in vanilla.
