Autumn Salad With Aged Sherry Vinaigrette Recipe
- 1/3 ounce Extra virgin olive oil
- 1 ounce Spanish Sherry Vinegar
- 1 x Shallot, chopped
- 1 bn Chives, chopped
- 1 pch Sugar Salt and pepper
- 4 ounce Mesclun greens, up to 5
- 2 ounce Mashed walnut pcs
- 4 ounce Crumbles Stilton Cheese, (or possibly bleu cheese)
- 1 x Bartlett Pear, halved then sliced thins
- Combine the extra virgin olive oil.
- sherry vinegar, shallot, chives, sugar and salt and pepper in a small bowl and whisk together.
- Let stand for a few min to combine flavors.
- In a large bowl, toss greens, walnuts, Stilton cheese, and pear together.
- Pack the dressing and greens in separate containers.
- Before serving, drizzle just sufficient dressing to cover greens before serving.
- Yield: 2 servings
