Sweet & Salty Pecan Cookies

  1. Heat oven to 350F.
  2. Combine butter, sugar and vanilla in large bowl; beat at medium speed until creamy.
  3. Reduce speed to low; add flour, pecans and potato chips; beat until well mixed.
  4. Shape dough into 1-inch balls; place onto ungreased cookie sheets.
  5. Flatten each to 1/4-inch thickness with bottom of glass dipped in sugar.
  6. Bake for 10 to12 minutes or until cookies are just set.
  7. Cool 1 minute on cookie sheets; remove to wire cooling rack.
  8. Cool completely.
