Sweet & Salty Pecan Cookies
- 1 cup Land O Lakes Butter, softened
- 1 cup sugar
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/2 cup finely crushed potato chips
- Sugar or coarse grain sugar
- Heat oven to 350F.
- Combine butter, sugar and vanilla in large bowl; beat at medium speed until creamy.
- Reduce speed to low; add flour, pecans and potato chips; beat until well mixed.
- Shape dough into 1-inch balls; place onto ungreased cookie sheets.
- Flatten each to 1/4-inch thickness with bottom of glass dipped in sugar.
- Bake for 10 to12 minutes or until cookies are just set.
- Cool 1 minute on cookie sheets; remove to wire cooling rack.
- Cool completely.
