Chicken With Wild Rice Recipe
- 2-3 lbs. chicken
- 1 med. onion, sliced
- 1 1/2 teaspoon salt
- 1/2 c. sliced celery
- 1/2 teaspoon curry
- 2 Packages long grain and wild rice with seasonings (6 ounce. size)
- 1/4 c. butter
- 1 pound sm. mushrooms
- 1 c. cream of mushroom soup
- 1 c. lowfat sour cream
- Put chicken with 1 c. water, celery, onion, salt and curry pwdr in pot and simmer for 1 hour.
- Remove chicken, strain broth and cook the rice using the broth instead of water, adding sufficient water to make required amount.
- Saute/fry mushrooms in butter, adding chicken meat that has been cut into bite size chunks.
- Blend soup and lowfat sour cream and add in to chicken and mushrooms.
- Put into a 4 qt casserole dish with cover.
- Bake 1 hour at 350 degrees.
- Let stand 15 to 20 min before serving.
