Marsha's Version of Erin's Mexican Lasagna

  1. Preheat oven to 350F.
  2. Brown turkey.
  3. Add seasoning packet, onion, enchilada sauce, salsa, corn and black beans.
  4. Simmer for 5-7 minutes.
  5. Combine cottage cheese and eggs.
  6. Spray 9 x 13 pan with cooking spray.
  7. Assemble lasagna in following order 1/3 meat mixture, enough tortillas to cover layer (will have to be ripped to fit), 1/3 cottage cheese mixture, 1/3 cheese, repeat.
  8. Bake at 350F for 25 minutes.
  9. Let stand for 10 minutes before serving.
