Parmesan noodles with brown butter
- 4 tbsp butter (salted or unsalted, whichever u prefer)
- 1/2 lb (8oz) spaghetti noodles
- 1/3 cup grated parmesan cheese (plus more for topping) it must be grated not shredded
- 1 fresh ground pepper
- 1 optional toppings are, basil, parsley, bacon or fresh diced tomatoes, or anything you prefer
- In a med size pot cook your pasta til al dente.
- Meanwhile in a small heavy bottom skillet melt the butter, whisk frequently til foam starts to subside.
- Keep stirring til butter starts to brown.
- This takes about 10 min or so but don't walk away cuz the butter will burn!!!
- (burnt butter isn't good!)
- Once pasta is done take it off the heat, do not drain!
- Using a pair of tongs add pasta into a large pasta bowl and pour butter and the 1/4c pasta water.
- Stir well.
- Add cheese and as much pepper as you like and turn pasta to coat.
- Add more if the pasta water if needed.
- Top with your favorite topping or leave as-is!
