Pickled Pears

  1. Dissolve sugar in vinegar and simmer with spices stirring slowly until sugar dissolves.
  2. Fill a bowl with cold water and add lemon juice and slices.
  3. Add the pears as you peel and quarter them.
  4. Drain pears and add them to the vinegar and spice mix.
  5. Boil for about 15 minutes.
  6. Fill a sterilized jar with pears and return vinegar for further 5 minutes boiling.
  7. Top up pears with vinegar mixture.
