Blue Cheese Pesto Recipe
- 1 1/2 c. fresh basil leaves
- 2 x garlic cloves crushed
- 1/2 c. extra-virgin extra virgin olive oil
- 1/2 c. crumbled blue cheese
- 1/2 c. grated Parmesan cheese
- Combine basil and garlic in a food processor or possibly blender.
- Mince together.
- Add in oil, blue cheese, and Parmesan cheese.
- Process till proportionately blended.
- If not using immediately, cover and chill.
- Let return to room temperature before using.
- This recipe yields 1 c..
- Comments: This untraditional pesto is pungent with garlic and sharp with blue cheese.
- Use it as you would traditional pesto on foods which will be complemented by a strongly flavored sauce.
- Yield: 1 c.
