Curried Rice Bean Salad Recipe
- 3 c. brown rice, cooked
- 1 1/2 c. red kidney beans, cooked
- 4 green onions, minced
- 1/2 green pepper, diced
- 2 stalks celery, diced
- 1/4 c. fresh parsley, minced
- 1/4 c. mayonnaise
- 1/4 c. plain low-fat yogurt
- 2 teaspoon curry pwdr
- Dash of freshly grnd black pepper
- Combine first 6 ingredients.
- Toss to mix.
- In a separate bowl, combine mayonnaise, yogurt, curry pwdr and black pepper.
- Blend thoroughly with rice/bean mix.
- Yield: 6 servings.
- Approximately 145 calories per serving.
