Pimento Cheese With Bacon
- 4 tablespoons cream cheese
- 2 cups sharp cheddar cheese, grated
- 1 cup monterey jack cheese, grated
- 14 cup light mayonnaise
- 1 teaspoon onion powder
- 1 (4 ounce) jar chopped pimiento, drained
- 2 tablespoons sweet relish
- 4 slices bacon, cooked crisp and crumbled
- In a food processor, pulse together the cream cheese, cheddar, and monterey jack cheeses with mayonnaise and onion powder.
- Add pimentos and relish and pulse until blended but still chunky.
- Stir in bacon, transfer to a bowl, cover and chill at least 1 hour.
