Spicy Chicken & Garlicky Mushrooms
- 4 boneless skinless chicken breasts
- 1 bottle of your favorite seasoning (best suited for chicken, I like Garlic Pepper)
- 28 ounces chicken broth (2 cans)
- 1 lb of your desired mushroom
- 12 cup butter
- 4 garlic cloves
- Sprinkle the chicken with your favorite spice and press into the chicken then let it sit.
- (you could do this over night or a few hours earlier for better tasted).
- While your chicken is marinade the chicken, chop up the garlic and warm up chicken broth in a sauce pan.
- Place the garlic and the butter in a frying pan and let it sit for about 10 minutes (it won't hurt to add more of your spice to this mixture).
- Meanwhile, place the chicken in the boiling broth and let it simmer on med-low.
- Remove the garlic and then add 3/4 C (from the saucepan) to the frying pan.
- Add the mushrooms to the broth in the frying pan and let them simmer for about 10 more minutes.
- When the mushrooms are complete, your chicken should be as well.
- I usually layer it on top of rice and it is a big hit with my family!
