Black-Eyed Peas Soup

  1. Place ham bone in large pan with water and bay leaf.
  2. Cover and bring to boil and turn to medium heat.
  3. Let simmer approximately two hours or until all remaining ham comes off bone.
  4. Remove bone and add chicken broth, celery, onion, peas and additional water if needed.
  5. Cover and simmer approximately one hour.
  6. Add seasonings according to your taste.
  7. This goes very well with homemade cornbread.
