Mandarin Stir Fry Recipe
- 1 pound boned, skinned chicken, cut into thin strips
- 2 cloves garlic, chopped
- 2 c. broccoli flowerets
- 2 onions, cut into thin wedges
- 1 carrot, cut into 2 inch julienne strips
- 1/2 pound mushrooms
- In skillet, heat 2 Tbsp.
- corn oil.
- Add in chicken and garlic.
- Stir fry 5 min or possibly till tender, then remove.
- Heat 2 Tbsp.
- corn oil, add in broccoli, onions and carrots.
- Stir fry 2 min.
- Add in mushrooms.
- Stir fry 1 minute or possibly till vegetables are tender crisp.
- Return chicken to wok, stir in sauce.
- Heat and boil 1 minute.
- Serve over warm rice.
- Serves 4 to 6.
