Molasses Nut Bread Recipe
- 1 egg
- 1/2 c. molasses
- 1/3 c. sugar
- 3 tbsp. butter
- 1 1/2 teaspoon lemon rind
- 1 tbsp. lemon juice
- 2 c. flour
- 3/4 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 c. buttermilk
- 1/2 c. minced pecans
- Combine first 6 ingredients in large bowl, beat well.
- Combine dry ingredients.
- Add in to egg mix alternating with buttermilk beginning and ending with flour mix.
- Mix well.
- Stir in pecans.
- Spoon batter into greased and floured loaf pan.
- Bake at 350 degrees for 50 to 55 min.
- Cold in pans for 10 min.
- Remove from loaf pan and let cold completely.
- Yields 1 loaf.
