Eggless Mayonnaise Recipe
- 1 med. Irish potatoes
- 1/2 c. vinegar
- 1 teaspoon salt
- 1 pt. Wesson oil
- 1 teaspoon dry mustard
- 1/2 teaspoon sugar
- Boil potatoes, mash while warm.
- Add in salt and mustard.
- Add in very slowly the oil, constantly beating.
- Season with Tabasco, onion juice and Worcestershire sauce to taste.
- A bit of turmeric may be added to give proper color.
- Used in World War I.
