Coconut and Cardamom Rice Pudding
- 2 bags Success Basmati Rice
- 1 can (13-1/2 oz.) light coconut milk
- 1 cup milk
- 1/3 cup sugar
- 1/2 cup golden raisins
- 1/2 tsp. ground cardamom
- 1/2 tsp. rose water
- 1/4 cup sliced almonds, toasted
- 1/4 cup pistachios
- Prepare rice according to package directions.
- In a heavy bottomed medium saucepan bring coconut milk, milk and sugar to a boil, stirring occasionally.
- Reduce heat and simmer 5 minutes.
- Stir in rice, raisins, cardamom and rose water, if desired, and cook 5 more minutes, stirring occasionally.
- Spoon mixture into serving bowls and garnish with almonds and pistachios.
