Coconut and Cardamom Rice Pudding

  1. Prepare rice according to package directions.
  2. In a heavy bottomed medium saucepan bring coconut milk, milk and sugar to a boil, stirring occasionally.
  3. Reduce heat and simmer 5 minutes.
  4. Stir in rice, raisins, cardamom and rose water, if desired, and cook 5 more minutes, stirring occasionally.
  5. Spoon mixture into serving bowls and garnish with almonds and pistachios.
