Thai Peanut Butter Beef Stir-Fry
- 1 Tbsp. oil
- 1 lb. boneless beef sirloin steak, cut into strips
- 1 pkg. (16 oz.) frozen stir-fry vegetables
- 2 cups water
- 1-3/4 cups instant white rice
- 1/2 cup creamy peanut butter
- 1/4 cup lite soy sauce
- 1 tsp. hot pepper sauce
- Heat oil in large skillet on medium-high heat.
- Add meat; cook and stir 4 to 5 min.
- or until done.
- Add vegetables and water; stir.
- Bring to boil.
- Stir in rice; cover.
- Simmer on medium-low heat 5 min.
- Meanwhile, mix peanut butter, soy sauce and hot pepper sauce until blended.
- Add peanut butter mixture to meat mixture; mix well.
