An Easy Method for Parboiling Greens

  1. I rinsed and removed the dirt and damaged parts from 10 bunches of spinach, and placed them in a bowl.
  2. *Prepare a colander and a bowl of water.
  3. Boil the water for parboiling in a pot.
  4. First, pour the boiling water over the stalks into the bowl, and soak in boiling water for a minute.
  5. After 1 minute, lay the greens on their side, and pour the remaining boiling water over the leaves, while stirring them up from top to bottom.
  6. Drain the greens in a colander right away to prevent overcooking.
  7. Transfer to the prepared bowl of water, then run cold water over them to cool.
  8. For spinach and other greens that are a bit bitter, soak in water for a while.
