Carbonara
- 11-2/3 fl. oz. cream
- Sweet basil, to taste
- Mushrooms, to taste
- Bacon, to taste
- 3 to 4 spring onions, sliced
- Salt and pepper to taste
- Parmesan cheese, grated
- Fettucine
- Dice bacon and slice mushrooms into smallish pieces.
- Lightly fry for a few minutes until they are approximately half cooked.
- Add the cream, basil and any spices; simmer on low heat.
- Meanwhile, cook fettucine according to package directions.
- The cream will simmer down and turn a light brownish colour.
- About 90 seconds before the fettucine is ready, add spring onions.
- Serve immediately on top of the pasta.
- Grate Parmesan on top for added flavor.
