Carbonara

  1. Dice bacon and slice mushrooms into smallish pieces.
  2. Lightly fry for a few minutes until they are approximately half cooked.
  3. Add the cream, basil and any spices; simmer on low heat.
  4. Meanwhile, cook fettucine according to package directions.
  5. The cream will simmer down and turn a light brownish colour.
  6. About 90 seconds before the fettucine is ready, add spring onions.
  7. Serve immediately on top of the pasta.
  8. Grate Parmesan on top for added flavor.
