Micro Potatoes Recipe
- 6 med. red potatoes
- 1 tbsp. grated onion
- 1/8 teaspoon salt
- 1 tbsp. minced parsley
- 1/2 teaspoon thyme
- 1 1/2 c. shredded cheddar cheese
- 1/4 c. melted butter
- Scrub potatoes, pierce twice with fork.
- Microwave at high for 12 min.
- Mix remaining ingredients except the butter.
- Cold potatoes.
- Don't peel.
- Slice thinly.
- Arrange slices in flat glass dish.
- Brush with melted butter.
- Sprinkle other ingredients over and microwave on high for 2 min.
