Creamy Frozen Fruit Salad
- 1/4 c. sugar
- 1/2 tsp. salt
- 1 1/2 Tbsp. flour
- 2 Tbsp. vinegar
- 2/3 c. evaporated milk
- 1 c. drained diced canned pears
- 3/4 c. drained pineapple tidbits
- 3/4 c. syrup, drained from fruit
- 1/2 c. drained maraschino cherries, chopped
- 2 c. mashed medium ripe bananas
- 1 slightly beaten egg
- 1 c. chopped pecans
- 1 Tbsp. lemon juice
- Combine sugar, salt and flour in saucepan.
- Add fruit syrup, egg and vinegar. Cook over medium heat, stirring constantly until thickened.
- Cool.
- Add fruit and nuts.
- Chill evaporated milk in freezer until soft ice crystals form, 10 to 15 minutes.
- Whip until stiff, about 1 minute.
- Add lemon juice.
- Whip 1 more minute (until very stiff).
- Fold into fruit mixture.
- Spoon into lightly greased 6 1/2-cup mold.
- Freeze firm, 5 to 6 hours.
- Makes 12 servings.
