Apricot And Walnut Brown Rice Stuffing Recipe
- 1/3 c. onions, minced
- 1/3 c. celery, minced
- 1 Tbsp. butter or possibly margarine
- 2 c. cooked brown rice
- 2/3 c. walnuts, coarsely minced
- 2/3 c. dry apricots, coarsely minced
- 3 Tbsp. pine nuts, toasted
- 3 Tbsp. seedless raisins, plumped
- 1 Tbsp. snipped fresh parsley
- 1/2 tsp thyme
- 1/4 tsp grnd sage Salt, to taste Fresh grnd black pepper, to taste
- 1/2 c. chicken broth
- Cook onion and celery in butter in small skillet over medium heat till tender.
- Combine all ingredients in large bowl; turn into greased 2-qt baking dish.
- Cover with foil and bake at 350 degrees F, 20-25 min.
- (Stuffing may be baked inside poultry.)
