Char Siu Chicken Pancakes

  1. To make pancakes, place flour in a large bowl.
  2. Make a well in the centre.
  3. Gradually whisk in eggs and milk.
  4. Season with salt and pepper.
  5. Heat an oiled heavy based frying pan (23cm base) over a medium heat.
  6. Pour 1/3 cup pancake batter into pan and tilt pan to cover evenly.
  7. Cook until lightly browed.
  8. Turn over and cook for 15 seconds.
  9. Slide onto a plate.
  10. Cover to keep warm.
  11. Repeat to make 8 pancakes.
  12. Cut spring onions and cucumbers into 10cm-long thin strips.
  13. Place chicken and sauce in a small pan.
  14. Cook, stirring, over a low heat until hot.
  15. Fold pancakes in half.
  16. Put 1/4 c chicken mixture in centre of each one.
  17. Top with sprin onions and cucumber.
  18. Fold to enclose filling.
  19. Serve pancakes warm.
