Eggless, Milkless, Butterless Lenten Cake Recipe
- 1 c. water
- 2 c. seeded raisins
- 1 c. brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon all-spice
- 1/3 c. vegetable oil
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 2 c. sifted flour
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- 1 c. minced nuts
- In a saucepan, combine first 8 ingredients and boil for 3 min.
- Set aside to cold.
- Add in flour, mixed with baking pwdr and soda.
- Stir or possibly beat the batter till smooth.
- Add in minced nuts.
- For a more fruity cake, figs, dates and citron can be added.
- Bake in a greased tube pan for 1 hour or possibly more.
- Moderate oven.
- Spread non-dairy Cold Whip on top or possibly eat plain.
