Chris's Pico
- 5 large Tomatoes
- 3/4 large SWEET onion
- 3/4 medium Jalepeno pepper
- 1 medium Pablono pepper
- 3 tbsp Cilantro
- 1/4 cup Lime juice
- 3 tsp Cumin
- 1 tbsp Salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- Chop tomatoes into 1/4 in pieces, and place in large mixing bowl.
- Add most of the salt.
- Mix.
- Strain tomatoes and place back into mixing bowl.
- Remove seeds from jalepeno.
- You might think about wearing gloves when you do this!
- Rinse pepper.
- VERY finely mince and add to tomatoes.
- Remove seeds and finely chop poblano.
- This can be replaced with red martin peppers, or something close.
- A bell pepper in a pinch but I dont like the flavor as much.
- Finely chop onion.
- Vidalia is best.
- Add to tomatoes.
- Finely chop cilantro and add.
- Add seasonings and lime juice.
- Thoroughly mix and add more salt to taste.
