Spice Carrot Muffins
- 2 c. all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1/2 tsp. salt
- 1 c. flaked coconut
- 3 eggs, beaten
- 1/2 tsp. vanilla
- 1 1/4 c. brown sugar
- 2 tsp. soda
- 2 c. shredded carrots
- 1/2 c. chopped pecans or walnuts
- 1 c. vegetable oil
- granulated sugar for topping
- Preheat oven to 375u0b0.
- Combine flour, brown sugar, pumpkin pie spice, soda and salt.
- In separate large bowl, combine remaining ingredients, except granulated sugar.
- Mix well.
- Add carrot mixture to flour mixture.
- Line muffin tins with paper baking cups.
- Spoon mixture into muffin cups.
- Sprinkle tops with granulated sugar.
- Bake 18 to 20 minutes until toothpick comes out clean.
- Makes 24 medium sized muffins.
