Crockpot Ranch Pork Chops and Parmesan Mashed Potatoes

  1. In a medium sized bowl mix ranch dressing mix, soup, sour cream, 1/4 cup of the Parmesan cheese and diced onion.
  2. Add this into a medium-sized crockpot.
  3. Add pork chops and baby carrots into the crock.
  4. Flip the chops and press them down into the liquid to cover them with the soup mixture.
  5. Cover and cook on high for 2-3 hours or on low for 4 hours.
  6. About 40 minutes before youre ready to eat, bring a pot of water to a boil and add the red potatoes.
  7. Allow them to boil for about 25 minutes or until fork tender.
  8. Drain water and mash the potatoes (do not over-mash).
  9. Stir in butter, garlic, remaining 1 cup Parmesan cheese, milk, salt and pepper.
  10. Place pork chops and potatoes on a serving platter.
  11. Drizzle with extra sauce thats remaining in the crockpot.
  12. Serve and enjoy!
