Ladybirds Seasoned Roast or BBQ Potatoes .
- 4 6 medium potatoes , peeled and cut into small chunks .
- 1 tbsp minced garlic
- 1 tbsp fresh chopped oregano
- 1 tbsp fresh chopped chives
- 1 tbsp fresh chopped parsley
- 1 tsp fresh chopped basil
- 1 tsp fresh choppe lemon balm .
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp curry powder
- 1/2 tsp cracked black pepper
- 1 pinch salt
- 3 cup - 5 tablespoon of olive oil
- Preheat the oven to 220C .
- Peel and wash the potatoes then cut them into small chunks .
- In a large bowl , place the potatoes chunks followed by the minced garlic , chili powder , smoked paprika , curry powder , salt and cracked black pepper and mix around to coat all then add enough olive oil to coat all the potatoes chunks well .
- Next add the chopped fresh oregano , basil , chives and parsley , to the potato mix and stir to well to coat all thoroughly .
- Pour the prepared potato mixture into a baking dish and spread the potatoes all over the bottom of your baking dish , making sure all the oil goes into the baking dish also .
- Then place in the Preheated oven for about 30-35 minutes , or lightly golden on the bottoms of the potatoes , then turn them over in the baking dish ( shake the baking dish to loosen the potatoes to turn them ) now turn oven down to 200C and proceed to cook the potatoes for a further 25-35 minutes , or until potatoes are cooked through and lightly golden and crisp on the outside .
- Once cooked remove from the heat , place on a warm plate and serve hot as a side to your favorite roast or meat dish .
