Ladybirds Seasoned Roast or BBQ Potatoes .

  1. Preheat the oven to 220C .
  2. Peel and wash the potatoes then cut them into small chunks .
  3. In a large bowl , place the potatoes chunks followed by the minced garlic , chili powder , smoked paprika , curry powder , salt and cracked black pepper and mix around to coat all then add enough olive oil to coat all the potatoes chunks well .
  4. Next add the chopped fresh oregano , basil , chives and parsley , to the potato mix and stir to well to coat all thoroughly .
  5. Pour the prepared potato mixture into a baking dish and spread the potatoes all over the bottom of your baking dish , making sure all the oil goes into the baking dish also .
  6. Then place in the Preheated oven for about 30-35 minutes , or lightly golden on the bottoms of the potatoes , then turn them over in the baking dish ( shake the baking dish to loosen the potatoes to turn them ) now turn oven down to 200C and proceed to cook the potatoes for a further 25-35 minutes , or until potatoes are cooked through and lightly golden and crisp on the outside .
  7. Once cooked remove from the heat , place on a warm plate and serve hot as a side to your favorite roast or meat dish .
  8. Enjoy .
