Cooked Plum Jam - CERTO Crystals

  1. Pit, but do not peel, plums.
  2. Finely chop plums, place in medium saucepan.
  3. Stir in water.
  4. Bring to boil; cover.
  5. Simmer 5 min.
  6. Measure exactly 6 cups prepared plums into large saucepan.
  7. Add pectin crystals; mix well.
  8. Bring to boil on high heat.
  9. Stir in sugar.
  10. Return to boil; cook 1 min.
  11. Remove from heat.
  12. Stir and skim 5 min.
  13. to prevent fruit from floating to surface.
  14. Pour into warm sterilized jars, filling up to 1/4 inch from rims.
  15. Cover with lids.
  16. Let stand at room temperature 24 hours or until set.
