Tuna Bulgur Salad

  1. In 8 cup casserole, combine water, bulgur and salt; cover and microwave at high until boiling, 6 minutes.
  2. Stir, let stand, covered, for 10 minutes.
  3. Add onions, tomatoes, cucumber, parsley and tuna, toss well.
  4. Toss with oil and lemon juice; season with pepper and salt to taste.
  5. Serve at room temperature.
