Non-Fried Daigaku Imo Sweet Potatoes
- 1 medium Sweet potato
- 2 tbsp Olive oil
- 3 tbsp Sugar (if possible, soft light brown sugar)
- 1 tsp Mentsuyu (2x concentrate)
- 1/2 tsp Vinegar
- 2 tbsp Water
- 1 Black sesame seeds (optional)
- Wash the sweet potatoes.
- Roughly chop into 5-6 cm long, slightly thin slices.
- Put the slices into a bowl and soak in water.
- Drain.
- Put the ingredients into a frying pan and lightly mix together.
- Spread the ingredients out in the pan (this is to even out the flavor).
- Put the sweet potatoes on top, cover with a lid, turn on the heat, and steam-cook.
- When it comes to a boil, flip the potatoes occasionally (for about 15 minutes).
- When you can easily press a skewer through the potatoes, take off the lid.
- Coat the potatoes with the sauce as the water evaporates.
- Transfer to a plate and sprinkle black sesame seeds on top.
- Enjoy!
