Cheddar Cheese Mold
- 1 pound Sharp Cheddar Cheese, Grated
- 1 cup Pecans, Finely Chopped
- 2 cups Mayonnaise
- 1 whole Medium Onion, Finely Chopped
- 2 cloves Garlic, Pressed
- 2 dashes Tabasco
- 1 cup Strawberry Preserves
- Mix all ingredients (except preserves) and press mixture into a mold lined with plastic wrap.
- Refrigerate several hours or overnight.
- Unmold.
- Serve with whole strawberry preserves (or jam) in the center and crackers (Ritz are my preference).
- For a nice touch, put the strawberry preserves in a small bowl in the center of a ring mold.
- Note: For smaller parties, I will often cut the recipe in half and use a small bowl as the mold.
