Thai Satay with Spicy Peanut Sauce
- 2 pounds pork or chicken, sliced into strips
- 3/4 cup coconut milk thick
- 1 1/2 tablespoons lemongrass sliced
- 1 tablespoon galangal root minced
- 2 tablespoons red onion
- 1 1/2 tablespoons garlic minced
- 2 tablespoons coriander seeds ground
- 1 tablespoon curry powder yellow
- 1 tablespoon kaffir lime leaves chopped
- 2 1/2 tablespoons sugar
- 1/2 teaspoon salt
- 7 each hot chili peppers dried, soaked until soft
- 1 1/2 teaspoons galangal root minced
- 2 tablespoons cilantro root minced
- 1 1/2 tablespoons lemongrass chopped
- 2 1/2 tablespoons garlic minced
- 3 1/2 tablespoons red onion chopped
- 1 teaspoon coriander seeds ground
- 1 1/2 teaspoons shrimp paste
- 5 cups coconut milk
- 13 cup peanut butter
- 1/4 cup sugar
- 3 1/2 teaspoons salt
- In a blender or food processor, grind the listed ingredients, from lemon grass to salt, finely.
- Mix with the meat (wear latex gloves to do this, it stains) and marinate for 1 hour.
- Cook.
