Salsa Pasta Salad Recipe
- 1 pkg. cork screw macaroni
- 6 med. tomatoes (diced)
- 2 med. onions (diced)
- 2 sm. med. green peppers (diced)
- 2 (4 ounce.) cans diced green chili peppers
- 1 (6 ounce.) can pitted ripe olives (sliced)
- 1/2 c. corn oil
- 1/3 c. lemon juice
- 1/3 c. vinegar
- 1/4 c. minced fresh cilantro or possibly 2 tbsp. dry coriando (crushed)
- 1 tbsp. chili pwdr
- 2 tbsp. Mexican flavor bouillon granules
- 1 1/2 teaspoon garlic salt
- Fresh cilantro sprigs (optional)
- Cook pasta according to package directions.
- In large bowl combine pasta with tomatoes, onions, green and red peppers, undrained.
- For dressing use screw top jar.
- Combine oil, lemon, vinegar, garlic salt, sugar and tsp.
- pepper.
- Cover, shake to mix.
- Pour over pasta mix.
- Toss gently till all ingredients are well coated.
- Top with cilantro sprigs.
