Hearty Italian Sausage Soup
- 1 tsp. olive oil
- 1 lb. Italian sausage, cut into 1/4-inch-thick slices
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 2 cans (14 oz. each) fat-free reduced-sodium chicken broth
- 1 soup can water
- 1 can (15 oz.) cannellini beans, rinsed
- 1 can (14.5 oz.) stewed tomatoes, undrained
- 1 cup rotini pasta, uncooked
- 1-1/2 cups baby spinach leaves
- 1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
- saltine crackers
- Heat oil in large saucepan on medium-high heat.
- Add sausage, onions and garlic; cook 10 min.
- or until sausage is done, stirring frequently.
- Add next 4 ingredients.
- Bring to boil.
- Stir in pasta; cook on medium heat 8 min.
- or until tender.
- Remove from heat.
- Stir in spinach; cover.
- Let stand 5 min.
- Top with cheese.
- Serve with crackers.
