Meatballs in Dill Sauce
- 12 cup salted cracker crumb
- 12 cup milk
- 1 beaten egg
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 tablespoon minced onion
- 14 teaspoon nutmeg
- 12 lb ground pork
- 12 lb ground beef
- 12 lb ground veal
- 13 cup cooking oil
- 3 tablespoons shortening
- 14 cup flour
- 10 12 ounces beef broth
- 12 cup light cream
- 1 teaspoon chopped fresh dill
- Mix crumbs and milk and let soften.
- Add egg, salt, pepper, onion, nutmeg, and meat.
- Blend gently but well, and form into small (1") balls.
- Saute in oil until brown.
- Remove from pan and set aside.
- Discard oil.
- Make sauce in same pan.
- Melt shortening; blend in flour.
- Cook slightly but do not let brown.
- Stir in broth and cream.
- Cook, stirring constantly, until thick and satiny.
- Add salt and pepper.
- Stir in dill.
- Add meatballs and simmer for 10 minutes.
- Serve with hot noodles.
