Healthy! Tofu Crab Stick Cream Croquettes
- 150 grams Silken tofu
- 70 grams Imitation crab sticks
- 2 tbsp Flour
- 1 tbsp Mayonnaise
- 1 tsp Consomme (powdered type)
- 1 Salt and pepper
- 1 Panko
- 1 to 2 tablespoons Olive oil
- Shred the crab sticks.
- With the frying pan on low heat, add the tofu and consomme and whisk until smooth.
- Evenly mix in a small amount of flour at a time, taking care not to create lumps.
- Add the crab sticks and mayonnaise to the mixture, and mix with a rubber spatula, then season with salt and pepper to taste.
- Once it cools down a bit, separate the batter into 8 portions.
- Using plastic wrap, mold each portion into a patty and dredge in panko.
- Heat olive oil in frying pan, and fry both sides of the patties on low-medium heat until golden brown.
- Transfer to a serving dish and they're ready to serve.
- I made Step 4 even simpler!
- While still hot (but cool enough to handle), spoon a bite-sized amount into a bowl of panko.
- Roll evenly in the panko while forming a ball, then shape the patties using your hands.
