Healthy! Tofu Crab Stick Cream Croquettes

  1. Shred the crab sticks.
  2. With the frying pan on low heat, add the tofu and consomme and whisk until smooth.
  3. Evenly mix in a small amount of flour at a time, taking care not to create lumps.
  4. Add the crab sticks and mayonnaise to the mixture, and mix with a rubber spatula, then season with salt and pepper to taste.
  5. Once it cools down a bit, separate the batter into 8 portions.
  6. Using plastic wrap, mold each portion into a patty and dredge in panko.
  7. Heat olive oil in frying pan, and fry both sides of the patties on low-medium heat until golden brown.
  8. Transfer to a serving dish and they're ready to serve.
  9. I made Step 4 even simpler!
  10. While still hot (but cool enough to handle), spoon a bite-sized amount into a bowl of panko.
  11. Roll evenly in the panko while forming a ball, then shape the patties using your hands.
