Vegetable Lasagna III
- 3 medium onions, chopped
- 1 lb mushroom, sliced
- 1 lb lasagna noodle
- 32 ounces cottage cheese
- 2 boxes broccoli, chopped frozen
- 8 ounces monterey jack cheese, sliced
- 16 ounces mozzarella cheese, grated
- 2 -3 eggs
- to taste oregano
- to taste garlic
- to taste basil leaves
- to taste bacon
- Combine cottage cheese, onions, eggs, oregano, garlic and basil leaves.
- Cook lasagna, fry bacon half way.
- Put 1 layer of lasagna, then cottage cheese, then broccoli, then Mozzarella, then Monterey Jack and then mushrooms.
- Repeat for second layer.
- Top with fried bacon.
- Bake at 350 degrees for 30 minutes.
