Beef With Red Onion Mustard Vinaigrette Recipe
- 1 pound top round steak
- Italian dressing (to marinate steak in)
- 1 1/2 tbsp. red wine vinegar
- 1 tbsp. extra virgin olive oil
- 2 tbsp. finely minced red onion
- 1 tbsp. finely minced fresh parsley leaves
- 1 tbsp. Dijon mustard
- Marinate the meat overnight in the Italian dressing.
- Grill to desired tenderness.
- Let meat rest; wrap in foil.
- In a bowl, whisk together the vinegar, mustard, and salt and pepper.
- Add in the oil in a stream, whisking till the dressing is emulsified.
- Stir in the onion and parsley.
- Slice the steak and serve with dressing drizzled over it.
